On the rare occasion when the stars and planets would align, my dad would cook dinner. And he would make the Best. Vegetables. Ever. (Drum roll.) Cracker crumb peas. These took center stage on the dinner plate. Spaghetti was forsaken for the peas. Goulash was quickly forgotten. Pizza… well we never had peas with pizza. It would have been a tough match.
There were never any leftovers.
Buttery, salty crackers merged with the otherwise ho-hum canned peas. The result was phenomenal.
Now… I am not going to claim these are healthy. But man…they are good.
And if you are…exploring… ways to get your kids to each more green things. This is a way to get your foot in the proverbial door. My kids fight over who gets the last spoonful from the pan.
There are never any leftovers.
- 2-4T butter
- 1 sleeve saltine crackers, crushed
- 1 can peas, drained
- Melt butter in a large pan. When butter is melted, but has not started to brown,
- Add cracker crumbs and stir until coated with melted butter and turning a golden brown (~2-3 min)
- Add drained peas and stir until headed through (~ 2 min). .
