I am not sure what possessed me to buy bologna… But there it was, sitting in my freezer. I wasn’t sure quite what to do with it. We are not big fans of bologna sandwiches and , really, what else to you do with it?
So I went on an internet search for something I could make.
Enter fried bologna casserole. Complete comfort food. Mashed potatoes, cheese, sauteed onions, and fried bologna, which turns out is pretty much flat “hot dogs.” Think cheese fries and hotdogs combined in one dish.
One kid smothered in in ketchup the other ate it up before he realized ketchup was even a possibility.
Fried Bologna Casserole

Ingredients
- 16 slices bologna
- 3 tablespoons butter
- 1 onion, chopped
- 4 cups warm mashed potatoes
- 1 cup mozzarella cheese
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Heat a skillet over medium-high heat. Fry the bologna slices in the hot skillet until browned on both sides, about 1 minute per side. Drain on a paper towel-lined plate.
- Melt butter in skillet and add and onion. Cook and stir until the onion has softened and turned translucent, (~ 5 minutes).
- Spread half of the mashed potatoes into the prepared baking dish. Layer with half onions and half of the fried bologna, and top with half of the cheese. Repeat with the remaining ingredients.
- Bake uncovered in the preheated oven until the cheese is bubbly, and the center is hot, about 30 minutes.
