Let me tell you how much flack my parents have given me for this salad over the year… Comments from “Why would you do that?” to “Get a real hamburger.” frequented the top of the list. Now… I came up with this salad over 20 years ago (yikes!) because I was a college student and didn’t have the time, money, or extra post-studying /part-time job/ walk to campus since I didn’t have a car, energy to make and actual hamburger. This was a quick (bagged lettuce and some condiments) that filled the hamburger craving. And *bonus*, it is much healthier without the who-knows-what’s-in-it patty and white bread. (Note: I am one of those people who will pick the toppings off the burger and eat those first…)
I did go ahead and add some organic ground beef as a topping here (mostly as a treat for my husband who loves red meat but doesn’t eat it very often; read: a couple of times a year). I ate mine, sans carne. **Delicious**
- 1 lb ground beef or turkey
- salt and pepper, to taste
- 8 c kale, chopped (or salad green or choice)
- 1 small red onion, diced
- 2 tomatoes, chopped
- 1/4 c feta cheese
- mayonnaise
- ketchup
- mustard
- dill relish
- Season hamburger with salt and pepper. On medium high heat, brown meat and drain off excess fat.
- In a bowl, combine kale, red onion, and tomatoes.
- Divide salad between four plates. Top each with 1/4 hamburger and feta.
- Add hamburger condiments of choice as the “salad dressing.”
