Horchata is normally made with rice. Soaking the grains in water and blending the resulting starchy liquid with sweetener and cinnamon. For a healthier version, I used oats. The kids love this and have been drinking it down faster than I can make it (score!).
A lovely cool summer drink served over ice. In the winter, it would be good served warm in a nice mug…sitting but the window and watching the snow fly outside.
