Potatoes. My kids love them. Mashed, baked, boiled, cheesy, or with just ketchup. It is a food love affair. Me….I am all up for some crunchy tatertots or curly fries (which we partake in about once a year, if that), but other than that, eh. Not my thing. But these potatoes…. Now these potatoes are something else entirely.
A little bit more healthy (thank you, kale) and a bunch more flavourful (yea, salami!). They are a warm and filling dish during the recent damp, cold spring days that are the current state of Colorado weather. (Snow in late April when everyone really just wants green trees and the smell of freshly cut grass).
My kids were ecstatic that they had a bowl of mashed potatoes for dinner. And I was happy that they didn’t glop on the ketchup before diving in with a gusto. Win-win 🙂
Kale and Sausage Colcannon

Ingredients
- 3 lb potatoes, cubed (I didn’t peel mine)
- 1c hard salami, chopped
- 4 c kale, chopped
- 1 onion, chopped
- 1/2c milk
- 3 T butter
- salt and pepper
Instructions
- Boil potatoes and kale until potatoes are fork tender.
- Meanwhile cook salami on med-low heat to render the fat, add onions and cook until onions are transparent, ~ 5min.
- Add the salami and onion mixture to the drained potatoes and kale along with the butter.
- Mash everything tougher, adding milt to desired consistency.
- Season with salt and pepper to taste.
