Ah….the weekend. Time to relax and recoup from a hectic work week and rushing the kids about. Ugh…I wish. Weekends around here are, more often than not, full steam ahead. We somehow manage to fill up any “free time” with projects. Drive way needs to be resealed, landscaping could do with an overhaul, hey!…. lets expand the garage! Great, wonderful ideas that we willingly allow to suck our down time away.

During such a flurry of activity, lunch is a quick wolf-it-down and get back to whatever we were doing. To keep us going, we need quick snacks. I have tendency to grab a cookie ( I love cookies) but prefer to have something that won’t result in a sugar crash. These little bites are perfect to quell the cookie monster, give us energy , and….well they are just plain yummy. Bonus –> they don’t involve turning the oven on or using a timer to make sure things don’t burn. Not that that ever happens….ever….
You can mix it up with different dried fruits or nuts. The mixture will be crumbly, but should hold together well when formed into balls or pressed into a dish (for bar cookies). If they are too crumbly, add a bit more liquid, either water or coconut oil. The humidity level of the dry ingredients and the environment can affect the amount of liquid needed to bind everything together.
Oatmeal raisin bites

Ingredients
- ¾ c oats
- 1/4 c ground flax seeds
- 2 T chia seeds
- ½ c raisins
- ½ c sunflower seeds (or nut of choice)
- 1/4 c ground flax seeds
- 2 T chia seeds
- 1-2 T coconut oil
- ½ tsp cinnamon
- ¼ tsp vanilla
- pinch cloves
- pinch salt
Instructions
- Pulse oats, flax seeds, and chia seeds in food processor or high powered blender (e.g. BlendTec) into a coarse meal.
- Add remaining ingredients and pulse until mixture holds together easily when squeezed between your fingers (adjust with coconut oil)
- Press into 8×6 pan, cut into 12 squares
- Refrigerate leftovers in an air-tight container.
