You could do this traditional-style with sliced tomatoes, a leaf of iceberg lettuce, stacked with pepperoni (or bacon) between two slices of bread. Or….you can do it all chopped up and thrown together with a little mayo, then piled on a slice of toasted bread. I go with the latter. The chopped-up, tossed-together version assures and even coating of mayo on all the components and sidesteps the annoying part sandwiches with tomato slices, namely, biting into the slice and having it pull off of the sandwich…ugh…I hate that.
But this sandwich… this sandwich I love.

Serves: 1 sandwich
Ingredients
- 8 cherry tomatoes, halved
- 1 cup baby spinach leaves
- 8 slices pepperoni (I used turkey pepperoni), cut into quarters
- 1-2 tablespoons mayonnaise (I used fat free)
- 2 slices whole wheat bread
Instructions
- Combine the first 4 ingredients
- Place mixture between the two slices of bread
- Enjoy -)
