Fantastic fuel for a fit family...

Veggie Fajitas

Sometime the kids make a request for dinner that goes beyond ramen noodles or mac and cheese.  This time?  Fajitas.

Roasted veggies in fajita seasoning wrapped in a warn tortilla.  Top with some guacamole (because, come on …it guac.  we eat it by the spoonful around here), sour cream, and cheese.

Yum!  Dinner is kid approved.

Ingredients
  • 1 tablespoon cornstarch
  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon white sugar
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon ground cumin
  • 3 red peppers, cut into 1/2″ strips
  • 3 yellow peppers, cut into 1/2″ strips
  • 3 cups cauliflower florets
  • 1 large red onion, cut in half and sliced into 1/2″ strips
  • 4 whole wheat tortillas
  • sour cream (optional)
  • salsa (optional)
  • guacamole (optional)
  • cheese (optional)
Instructions
  1. Preheat oven to 450 F
  2. Stir cornstarch, chili powder, salt, paprika, sugar, onion powder, garlic powder, cayenne pepper, and cumin together in a small bowl
  3. Toss vegetables with seasoning mix
  4. Roast vegetable at 450 F for 20 min or until brown and cauliflower is tender
  5. Serve warm in tortillas with sour cream, guacamole, salsa, and cheese.
