Ingredients
- 1 tablespoon cornstarch
- 2 teaspoons chili powder
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon white sugar
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon ground cumin
- 3 red peppers, cut into 1/2″ strips
- 3 yellow peppers, cut into 1/2″ strips
- 3 cups cauliflower florets
- 1 large red onion, cut in half and sliced into 1/2″ strips
- 4 whole wheat tortillas
- sour cream (optional)
- salsa (optional)
- guacamole (optional)
- cheese (optional)
Instructions
- Preheat oven to 450 F
- Stir cornstarch, chili powder, salt, paprika, sugar, onion powder, garlic powder, cayenne pepper, and cumin together in a small bowl
- Toss vegetables with seasoning mix
- Roast vegetable at 450 F for 20 min or until brown and cauliflower is tender
- Serve warm in tortillas with sour cream, guacamole, salsa, and cheese.
